Morangos foram submetidos a congelamento após pré-tratamentos com pectina e cloreto de cálcio com diferentes concentrações na tentativa de estabelecer correlações dos efeitos destas substâncias e do processamento sobre as características físicas e microestruturais das frutas descongeladas. Metades de morangos foram submetidas à impregnação com pressão de vácuo controlada de 84,4, 50,5 e 16,6 kPa constituídos de pectina em concentrações de 0, 1,5, e 3% , adicionados de cloreto de cálcio em concentrações de 0, 3, e 6% e glicose 20%, durante 4 horas. Foram feitas medidas do teor de sólidos solúveis totais, perdas de fluido celular, textura e viscosidade da solução antes e após o congelamento/descongelamento. Foram feitas imagens de cortes dos tecidos durante o congelamento em função do tempo em microscópio ótico acoplado a um sistema cold-stage e temperatura controlada em que a redução da área celular foi quantificada utilizando um software analisador de imagens. A concentração de pectina teve influência e demonstrou potencial para a proteção do tecido de amostras congeladas. As fotomicrografias mostraram que a perda de fluido celular ocorre durante o crescimento de gelo formado nos espaços intercelulares, sendo retardada em tratamentos com altas concentrações de pectina.

Strawberries were submitted to freezing after pre-treatments with hydrocolloid and calcium salts (pectin and calcium chloride) at different concentrations, in the attempt to establish a correlation of the effects of these substances and their processing, on the physical and microstructural characteristics of fruits after thawing. Strawberry halves were submitted to impregnation with controlled vacuum pressure of 84.4, 50.5 and 16.6 kPa; comprising pectin at concentrations of 0, 1.5 and 3%; with the addition of calcium chloride at concentrations of 0, 3 and 6%; and glucose at 20%, for 4 hours. Measurements were made of the total soluble solid contents, cellular fluid loss, texture and viscosity of the solution, before and after the freezing/thawing. Images of the tissue cuts during the freezing, in function of time, were taken in an optic microscope coupled to a cold-stage and controlled temperature system, where the reduction of the cellular area was quantified using an image analyzing software. The pectin concentration had an influence on and demonstrated a potential for protection of the frozen tissue samples. The photomicrographs showed that the loss of cellular fluid occurs during the growth of ice formed in the intercellular spaces and it is retarded through treatments with high pectin concentrations.

Cortes cilíndricos de melões (Cucumis melo var. inodorus Naudin tipo amarelo) foram submetidos à impregnação com soluções de cloreto de cálcio (0,5 g.100 mL-1 de solução), adicionadas de amido gelatinizado (0, 5 e 10 g.100 mL-1 de solução) e glicose (0, 10 e 20 g.100 mL-1 de solução), com pressão de vácuo (84,4; 50,5 e 16,6 kPa) controlada. Foram feitas medidas do teor de sólidos solúveis totais, perda ou incorporação de componentes e textura de pedaços dos melões antes e após impregnação a vácuo. As variações desses parâmetros foram calculadas em relação aos do fruto original. Alterações na viscosidade das soluções devido aos processamentos também foram quantificadas. A existência de processos sinergísticos entre os fluxos de solutos do fruto e da solução pode ser constatada e analisada através de superfícies de resposta para as diferentes pressões, em função das concentrações de amido gelatinizado e de glicose nas soluções. A mobilidade molecular dos componentes do fruto e da solução em relação à viscosidade foi discutida.

Cylindrical cuts of melon (Cucumis melo var inodorus Naudin, yellow type) were submitted to impregnation with calcium chloride solutions (0.5 g.100 mL-1 of solution) added with gelatinized starch (0. 5 and 10 g.100 mL-1 of solution) and glucose (0. 10 and 20 g.100 mL-1 of solution) with controlled vacuum pressure (84.4; 50.5 and 16.6 kPa). Measurements of the total soluble solids, incorporation or loss components (turgidity) and texture of melon slices were made before and after vacuum impregnation. Quality parameter variations were calculated in relation to the original fruit. Alterations in the viscosity of the solutions during the processing had been also quantified. The existence of synergistic processes between the solute flows from the fruit and from the solution was evident and could be analyzed using response surfaces for the different pressures as a function of the glucose and gelatinized starch concentrations in the solutions. The molecular mobility of components of the fruit and the solution related to viscosity was discussed.

Polpas de morango (Fragaria ananassa) adicionadas de sacarose (0; 2,91; 10,0; 17,09; 20% peso/peso) e pectina (0; 0,15; 0,50; 0,85 e 1,0% peso/peso) foram caracterizadas quanto às propriedades físico-químicas e reológicas. As relações entre o comportamento reológico, as dinâmicas de congelamento/descongelamento e microestrutura dos cristais de gelo foram estabelecidas. Caracterizações físico-químicas e reológicas das amostras foram feitas antes e depois do congelamento/descongelamento. O congelamento foi realizado em banho ultratermostático a -20 ºC em cilindro de aço inoxidável com isolamento térmico no fundo, assegurando congelamento unidimensional. A fração de gelo nas amostras foi calculada usando modelos teóricos e durante o congelamento foi avaliada a concentração polarizada das amostras a cada 60 minutos. O descongelamento foi avaliado a 19 ºC pela relação tempo x aumento de área sendo estas obtidas por edição de fotografias e quantificadas em software analisador de imagens. As polpas apresentaram comportamento de fluido pseudoplástico e foi verificado um efeito sinergístico da sacarose e pectina em meio ácido observado pela variação da viscosidade. Os descongelamentos foram mais rápidos nas amostras mais concentradas de sacarose e pectina. Análises microestruturais mostraram que a adição de sacarose e pectina aumenta a velocidade da frente de congelamento nas amostras mais concentradas.

The physicochemical and rheological properties of strawberry (Fragaria ananassa) pulps with the addition of sucrose (0; 2.91; 10.0; 17.09; 20% weight/weight) and pectin (0; 0.15; 0.50; 0.85; 10% weight/ weight) were characterized. The relationship in rheology, freezing and thawing dynamics and the ice crystal microstructures were established. The characterizations were performed before and after the freezing/thawing process. The samples were frozen in a water-bath at -20 ºC, in a stainless steel recipient with a thermal insulation at the bottom to establish the radial heat flow in an infinite cylinder. The ice fractions were calculated using mathematical equations and the polarized concentrations were evaluated at every 60 minutes. The thawing process was assessed by the relationship between time and surface area growing with the thawing process at 19 ºC. The strawberry pulp was a pseudoplastic fluid. The pulps showed a sucrose and pectin synergic effect in acid environment and this fact confirmed the variation in the viscosity, thawing rate and freezing front velocity. The thawing process of the strawberries was faster for the higher concentrated samples. The microstructure of strawberry pulps was influenced by the factors studied, increasing the freezing front velocity on the most concentrated samples.
